Today’s post is a little different from my usual style and beauty related posts. For a while now I have been really into healthy eating and thought it would be fun to share what I eat in a day! Now, just because I enjoy eating healthy doesn’t mean I eat perfectly healthy everyday. Trust me, I have days where I eat ice cream for dinner. But, on the days where I put a conscious effort into healthy eating, I feel the best I ever have!

BREAKFAST

I’m the type of person who wakes up and is instantly hungry and ready for breakfast. My typical breakfast usually consists of some type of toast and a butt load of fruit. And if it’s not that, It’s a huge smoothie.

These are the two most frequent toast toppings for me; almond butter, honey, and chia seeds or mashed avocado with lemon juice. Most days my fruit consists of strawberries, banana, or pineapple. But sometimes I spice things up with a nectarine or some raspberries,

I know this smoothie looks far from appetizing, but I promise it is delicious! I actually posted about this a month or so ago. You can see my recipe post here.

LUNCH

For me, lunch is probably the meal the changes the most. Some days I’ll have basically a double breakfast and eat one of the things mentioned above. But when I am in the mood for some thing different, my favorite meal is this rice and bean bowl, at least that is what I like to call it.

For this all I do is cook some black beans, white beans, and corn in a sauce pan with a little coconut oil, salt, pepper, and chili powder. Once they have began to cook/heat up, I add in some rice and it’s ready to eat!

If I’m not eating that, I’ll usually have some type of sandwich or pasta.

DINNER

Dinner is probably my favorite meal of the day. When it comes to food, I am definitely more into savory rather than sweet tastes. And I feel like dinner is the perfect opportunity for savory meal!

My favorite dinner is Avocado pasta. It might look a little gross because of the color, but I promise it is delicious. I would seriously eat it every night if I could. You can find the full recipe here.

Another thing I really love for dinner is this sweet potato burger that my mom makes. It is seriously delicious. You can check out the recipe here!

SNACK

My mom and I are the biggest snakcers I have ever met. Sometimes we even have snack meals where we just eat a bunch of different small things instead of one big meal. One of the easiest and healthiest snacks I like to munch is just plain old fruits and vegetables! I love strawberries, pineapple, bananas, nectarines, raspberries, watermelon, cucumbers, celery, avocado and edamame. They are all quick and easy healthy snacks.

I also really love pretzels and humus, nuts, popcorn, pita chips, and flavored almonds!

DESSERT

Just like everyone else I love some ice cream, candy, and cookies when it comes to desert. But when I’m in the mood to keep things healthy these are some of my favorite options:

Strawberries and Almond Butter

All you have to do is cut up your strawberries and melt some almond butter to dip them in! Sometimes I like to add some honey in with the almond butter to give it some extra sweetness.

Frozen Bananas with Peanut Butter and Chocolate

Start off by slicing a banana into slices about an inch wide. Continue by spreading some peanut butter on a banana slice and topping it with another banana, like a banana sandwich! Then melt some chocolate and dip half of the banana peanut butter sandwich in the chocolate. Finish off by freezing! 

Banana Milkshake

For this all you need is 2 frozen bananas and some almond milk (any type of milk will work). Start by putting the two bananas in the blender and blend. Slowly add some almond milk until the desired consistency is achieved.


Please keep in mind, I definitely do not have the knowledge level of a nutritionist or dietitian by any means. I just eat what makes me feel my very best; and more often than not that is whole plant foods!
